Sauteed Vegetables with Quinoa

Quinoa is a grain high in protein, iron, magnesium, and fibre; and it is often used as a substitute for pasta or rice. It is quick and easy to cook, and tastes great!

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 2 servings

Ingredients
½ cup quinoa
1 cup quinoa
1 diced onion
Half a capsicum, chopped into cubes
Half a tin of chickpeas, drained
1/2 tsp. ground chilli
1 tbsp. soya sauce
1/2 tsp. mixed herbs

Method

  • Fry diced onions along with carrots.



  • Add water to the quinoa and bring to the boil. Turn down the heat and leave it to simmer for 20 minutes.



  • Add the chopped capsicum to the vegetable mix and sauté until the vegetables are tender. Then add the chickpeas, soya sauce, herbs and ground chilli and mix thoroughly.



  • Fork through the quinoa to make it fluffy and to loosen any clumps. Serve with the sautéed vegetables.

  • Quinoa makes a delicious alternative to rice or couscous
