I thought I would make some bacon and cheese muffins and I realised I only had ham in the fridge. I decided to give it a go and they are really good. I added in pesto to three and it made them ten times better. So now I add pesto to the whole batch.

Ready to eat.
Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 9 small ones
Ingredients
3 tablespoons of coconut oil melted
2 eggs
1/4 cup of shredded ham
1/4 cup of grated cheese
3 tablespoons extra grated cheese
2 teaspoons of pesto
1 cup of self raising flour
1/4 cup of almond milk
Method
Preheat over to 180 degrees Celsius.
Whisk eggs with coconut oil and pesto.
Add in 1/4 cup of cheese and the ham and mix well. *Add in flour and slowly add in the milk as you mix it.
When well combined spoon mixture into small cupcake cases in your muffin tin.

Sprinkle a little cheese on top and they are ready to go in the oven.
Sprinkle a little extra cheese on top of each so it will make them nice and golden on top .
