Savoury Moonblush Strawberries

Beautifully sweet and juicy, strawberries are usually eaten fresh or included as a sweet ingredient. However they are also delicious as a savoury treat. I had some strawberries that were getting a little too ripe and were perfect for this moonblush recipe.

I'm sure you have heard of sunblushed and you're probably wondering what the moon refers to in this recipe. The strawberries are left overnight in the oven after cooking which is the reference to the moon.

The gentle drying process leaves the strawberries with a concentrated and intense flavour.

I haven't included exact quantities, just use as many strawberries as you would like. Remember, they will shrink down quite a bit after drying in the oven.

Preparation Time: 5 minutes
Cooking Time: 2 hours

Ingredients
Strawberries
Salt & pepper

Method
  • Preheat a fan oven to 100 degrees C.
  • Remove and green leaves and the cut the strawberries in half. If they are very large you may need to quarter them.



  • Place the strawberries on a baking tray and spread them out.
  • Season with a little salt and pepper.
  • Bake the strawberries in the oven for two hours.
  • Turn off the oven but leave the strawberries in overnight.



  • These simple savoury strawberries make an unusual salad side dish to grilled meat. If you like, you could drizzle them with a little olive oil and balsamic vinegar.
