Scallopini with Apples Cream Sauce and Baked Chips

It is time for my "once a month or two" that I eat red meat and I bought some lovely young veal to try with apples and cream sacue.

The taste of the slightly tart apple, mixed with the cream and home made vegetable soup, was delicious, and I could not help myself and ate it all in one go, despite buying enough meat for two meals!

Home made chicken soup would also work, however I had some frozen vegetable soup for a while and decided to use this as I had blended the vegetables into the soup before freezing, and it was thick and healthy!

I also made fat free chips and a tomato salad to go with the scallopini.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 2 servings

Ingredients
2 large pieces baby veal
1 small shallot (or onion)
1 cup vegetable soup
2 apples
50 g butter plus 40 g extra
About 100 ml medium dry sherry
150 ml cream
About 100 ml vegetable stock (home made if possible)
2 potatoes (optional)
Tomatoes for salad (optional)

Method
  • Heat the oven to about 190° fan forced.

  • If making chips start this about 30 minutes before the meat meal.

  • Microwave the potatoes for a few minutes and then put on baking paper and spray with a bit of oil.

  • Add herb of your choice -this time I used coriander and paprika powders, as well as some salt, and bake dry in the oven.


  • Beat the veal lightly and cut the edges slightly to stop the meat curling.

  • Peel and chop one of the apples into coarse pieces, and peel, core, and cut the second one into rings.

  • Melt the butter in a fry pan and when it is hot, add the veal and sear quickly on each side (only for about 30 seconds each side).


  • Remove meat from the pan.


  • Add the chopped onion, and cook till it starts to soften.

  • Add the chopped pieces of apple and the sherry and reduce the heat. Cook for a few minutes.


  • Put the veal back in, add the stock, cover and simmer till the veal is tender -this should only be about 5 minutes as the meat is very thin.


  • Put the veal on serving dishes - I had cut it into smaller pieces.

  • Add the cream to the pan with the chopped apples and cook till slightly thickened
  • .

  • Meanwhile, cook the apple slices quickly in the extra butter.


  • Alternate one apple slice with one piece of scallopini.


  • Add the chips and the rest of the apple rings.


  • Pour over the thickened sauce with the chunks of apple in it.


  • I also made a tomato salad though could not finish this! A bed of rice could be another option instead of chips.
