Scallops Kilpatrick
Some sort of kilpatrick style, with cheese and onion added in, but swap worcestershire sauce with a bit seafood soy sauce. The light saltness of cheese and bacon, with the mild sweetness of seafood soy sauce and red onion are just so matched, making the whole to have a balanced delicious flavour.

Makes: 6 servings
Ingredients
6 scallops with shell, coral removed
1 small red onion, peeled, finely diced
2 shortcut bacon, finely diced
Amoy seafood soy sauce
Olive oil cooking spray
grated cheddar cheese
baby spinach leaves to garnish
Method
Preheat oven to 190 & #8451 ;.
Spray cooking oil in a frypan over low heat. Add diced onion and bacon. Stir fry constantly until just brown. Allow to cool a bit.
Clean scallops and shells. Wipe dry both scallops and shells.
Return scallops to the shells.
Make a shallow cross cut on each scallop top.
Divide fried onion and bacon between scallops.
Drizzle with a few drops of seafood soy sauce on each top.
Top with grated cheese.
Transfer them to a baking rack or tray.
Bake in oven for 6-8 minutes until cheese melts and bacon is a bit crisp.
Top with baby spinach leave to garnish.
Serve immediately.
