Scrambled Feta Fritters
A healthy and filling breakfast to keep you going till lunch.

Serves: 2
Ingredients
1 x 300g tinned sweetcorn
75g feta cheese
75g white self-raising flour
1 egg
3 spring onions
1 tbsp coconut oil
1 tbsp lemon juice
1/2 tsp black pepper
50ml water
Method
Chop the spring onions, slice the feta, drain the sweetcorn, and mix together with flour, egg, pepper, lemon juice, and water.
Fry the batter in coconut oil for 2 minutes.
Turn over the fritter, and scramble it, then cook for another to minutes.
