Scrambled Feta Fritters

A healthy and filling breakfast to keep you going till lunch.

Preparation Time: 10 minutes
Cooking Time: 4 minutes
Serves: 2

Ingredients
1 x 300g tinned sweetcorn
75g feta cheese
75g white self-raising flour
1 egg
3 spring onions
1 tbsp coconut oil
1 tbsp lemon juice
1/2 tsp black pepper
50ml water


Method
  • Chop the spring onions, slice the feta, drain the sweetcorn, and mix together with flour, egg, pepper, lemon juice, and water.

  • Fry the batter in coconut oil for 2 minutes.

  • Turn over the fritter, and scramble it, then cook for another to minutes.
