Scrambled Tofu

I'm not vegan. But, I do love a lot of vegan food. I particularly like this recipe, because it's super high in protein and it's really quick and satisfying. It's eaten in the same way that you would scrambled eggs.

In this photo I fried broccoli and zucchini before following the below instructions. It's yummy without it, I just like vegetables.



Preparation Time: 2 minutes
Cooking Time: 5-10 minutes
Serves: 2

Ingredients
200 grams firm tofu
1 tsp ghee or olive oil (for vegan)
2 Tbs finely chopped spring onions
4 fresh basil leaves, finely chopped (you can used a 1/4 tsp of dried basil if you don't have this)
pinch ground turmeric (or 1/4 tsp fresh and grated)
1 Tbs tamari
Salt and pepper to taste

Method
  • Use your hands to break up the tofu and place it to the side.
  • Heat the oil in a frying pan on a low heat.
  • Add the onion and basil to the pan. Stir until soft, about 3 minutes.
  • Now add the turmeric and tamari, stirring until combined.
  • The crumbled tofu can now be stirred through. This step is about coating the tofu and heating it through. It should take about 2-5 minutes. Continue to use a low heat as you do this or the tofu will dry out.
  • Season as you like with salt and pepper
  • Serve on toasted bread, perhaps spread with avocado with a tomato relish on the side.

  • Yum!

    Please note! It's really important that you do this on low heat. Otherwise all the liquid will evaporate leaving nothing left to flavour the tofu.
