Scrambled Tofu and Greens Vegan Sandwich

This mornings amazing scrambled spicy tofu with avocado, mushrooms, spinach, salt and pepper on crispy bread. My boyfriend and I are totally obsessed with these!


Preparation Time: 5 minutes
Cooking Time: 5 minutes
Serves: 2

Ingredients
Make my scrambled tofu
1/2 an avocado
1 cup of button mushrooms sliced
1 cup of leaves
1 tbsp nutlex
Salt and pepper to taste
4 slices of bread

Method
  • Make the scrambled tofu and set aside to cool.

  • Sautee the mushrooms with salt and pepper until browned - I use water, use oil if you prefer. Set aside to cool.
  • Slice the avocado and prepare the leaves.
  • Toast your bread and assemble the sandwich.
