Seafood Egg Salad
This is a salad or meal that my mother used to make many years ago, and as all my family love it, I tend to make it quite often.
I eat it as a meal with a salad, and then I have the leftovers for lunch for the next few days.
Although this product started off being called "crab", and then "seafood extenders", I do not know what it is made of but I doubt it is real crab! The original pack was [link http://reviewclue.com.au/premium-seafood-salad-mix/ this] however I could not get this brand when shopping online this time.
Nevertheless it is really one of my favourites, easy to make, cheap and enjoyed by all I have made it for.
Preparation Time: 20 minutes
Cooking Time: 8 minutes
Makes: 8 servings
Ingredients
1 packet [link http://reviewclue.com.au/seafood-salad-flake-by-george/ seafood salad]
About 6 or 7 eggs
About ¾ cup of mayonnaise
About ¼ cup of tomato sauce
Juice of ½ to 1 lemon
Method
Boil the eggs for about 8 minutes or until they are hard boiled.
Plunge them in cold water.
Pull the seafood sticks into small pieces.
Make the seafood about this size
Chop the eggs into small pieces and mix with the seafood.
Add the tomato sauce, mayonnaise, and lemon juice.
Mix well and taste -it may need a bit more tomato sauce and the dressing should cover all the food but not have excess.
Plated before adding salad
Serve as a meal, with or without a salad or serve with/or on bread.
