A marinara with all the best delights from the sea.
If you love seafood like I do then this dish will be absolutely indulging for you. This meal has every delight from the sea: from blue swimmer crabs, to calamari, salmon, fish and mussels. Many seafood shops sell the marinara mixture which is a great help when you want to make a delicious seafood feast. I made this over Christmas and called it the 'centrepiece' of the table. Preparation Time: 10 minutes
Cooking Time: 25 minutes
Makes: 6 or more servings
Ingredients 4 fresh blue swimmer crabs
1 kg fresh mixed seafood
4 cloves of garlic
1 handful of parsley
2 teaspoons of dried vegetable stock
1.5 cups of dry white wine
1.5 litres of tomato purée
1 cup of fresh cream
1 kg of pasta (penne or spaghetti)
Clean the crabs by pulling the back off and washing around the gills. (This is very easy and if you need help, just ask your fish monger to show you or even better do it for you.
Fry up the garlic and parsley on extra virgin olive oil and add the vegetable stock.
Add the tomato purée when the garlic has released its flavours.
Add the 1kg of seafood and the crabs.
Add the wine and bring to boil. Then simmer on low until the crab has changed colour (from blue to red).
Add the cream and stir through the sauce.
Cook the pasta and pour the sauce over it. Serve up with some Parmesan.
