Self-layering Custard Cake

This cake is truly amazing; simply make the batter, put it in the oven and it separates into three delicious layers all on its own! The top layer is a light and fluffy sponge, the middle a creamy custard, and the bottom a chewy vanilla base. Delicious on its own or with a scoop of ice-cream this dessert is sure to please!

Preparation Time: 15 minutes
Cooking Time: 50 minutes
Makes: 9 servings

4 eggs
150g white sugar
1 tbsp water
125g butter, melted
3/4 cup flour, sifted
1/2 tsp vanilla essence
2 cups luke-warm milk
icing sugar (for dusting)


Preheat oven to 160 degrees.

Separate eggs. Place egg whites in a medium bowl and beat until stiff peaks form.

Place egg yolks and sugar in a large separate bowl and beat until light and creamy.

Add melted butter and water to the yolk mixture, beat until combined

Add flour and vanilla, beat until completely smooth.

Gradually add milk, beating until totally incorporated.

Use a spatula to gradually fold in egg whites. Fold until mixture resembles scrambled eggs.

Pour mixture into a greased 8x8 inch pan and bake for 40 - 50mins or until golden and a skewer comes out clean when inserted into the centre of the cake.
(Note: if cake is browning too quickly, simply cover it in foil to continue cooking without further browning).

Cool completely in pan before cutting. Dust with icing sugar and serve with a scoop of ice-cream (and berries if you wish!).

In the self layering custard cake it just says flour, is that plain or SR
Just plain flour :)
