Sesame Nori Roasted Cashews

This is a very different recipe to anything I have ever made! I believe it is vegan and it has a very unusual salty, sweet, savoury taste and is great for a snack with no added refined sugar.

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Serves: About 30 pieces

Ingredients
2 sheets of nori
2 cups cashews, raw
2 tbsp maple syrup
1 tbsp coconut oil
1 - 2 tbsp tamari
4 tbsp sesame seeds
½ tsp salt

Method
  • Preheat the oven to 180°/160° if fan forced.

  • Place the nori sheets directly on the oven rack and toast for about 5 minutes until crisp. Remove from the oven and set aside.


  • Put the cashews on a baking sheet and roast for 5 to 7 minutes until just starting to go golden.

  • Meanwhile, in a small saucepan over a medium heat, mix the maple syrup, coconut oil and tamari. Cook, stirring continually until the mixture becomes frothy and slightly sticky - this will take about 4 minutes.


  • Add the roasted cashews and stir until coated.

  • Tear the toasted nori sheet with your hands into small pieces and stir them into the cashews along with the sesame seeds.


  • Pour the mixture back into the sheet pan, and spread it out in a single layer. Sprinkle with the sea salt and return to the oven and roast for a further 7 minutes until browned.

  • Allow to cool completely before storing in an airtight container.
