Sesame Nori Roasted Cashews
This is a very different recipe to anything I have ever made! I believe it is vegan and it has a very unusual salty, sweet, savoury taste and is great for a snack with no added refined sugar.
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Serves: About 30 pieces
Ingredients
2 sheets of nori
2 cups cashews, raw
2 tbsp maple syrup
1 tbsp coconut oil
1 - 2 tbsp tamari
4 tbsp sesame seeds
½ tsp salt
Method
Preheat the oven to 180°/160° if fan forced.
Place the nori sheets directly on the oven rack and toast for about 5 minutes until crisp. Remove from the oven and set aside.
Put the cashews on a baking sheet and roast for 5 to 7 minutes until just starting to go golden.
Meanwhile, in a small saucepan over a medium heat, mix the maple syrup, coconut oil and tamari. Cook, stirring continually until the mixture becomes frothy and slightly sticky - this will take about 4 minutes.
Add the roasted cashews and stir until coated.
Tear the toasted nori sheet with your hands into small pieces and stir them into the cashews along with the sesame seeds.
Pour the mixture back into the sheet pan, and spread it out in a single layer. Sprinkle with the sea salt and return to the oven and roast for a further 7 minutes until browned.
Allow to cool completely before storing in an airtight container.
