Shredded Beef Vegetable Soup
This soup is a healthy and satisfying meal for those winters days or nights.
Preparation Time: 90 minutes
Cooking Time: 40 minutes
Makes: 6 servings
Ingredients
360g stewing steak
2 litres of water
4 tsp beef stock
5 mushrooms
2 onions
rosemary sprig
3 tsp garlic (crushed)
2 tinned tomato (440g)
750g of mixed vegetables
1 tsp cumin
1 tsp corriander
1 tsp chilli
3/4 cup of uncooked rice
3 extra cups of water for later
Method
Saute 2 small onions.
In a large saucepan cook the beef in 5 cups of beef stock, 1 tsp garlic, chilli, coriander, cumin and rosemary for 90 mins.

Remove the beef but keep the stock for the soup
With a fork shred the beef so its all stringy.

To the saucepan add the mushrooms, remaining garlic, rice and other vegetables.
Bring to the boil and then add the beef.

Add the additional water as it evaporates.
Before serving remove the rosemary sprig.
Serve with crusty bread.
