Shredded Chicken Slow Cooked Burger
Slow cooking seems to do such a good job on all meat and poultry, that I decided to make the chicken first, and then a burger.
I made enough chicken that I could freeze some to use at a later date.
Preparation Time: 15 minutes
Cooking Time: 6 - 7 hours
Serves: 1 plus left over pulled chicken
Ingredients
**For the pulled chicken"
3 - 4 chicken breasts
About 300 g condensed tomato soup
Bit of water
1 onion, chopped
¼ cup vinegar
2 tbsp coconut sugar
1 tbsp Worcestershire sauce
½ tsp salt
¼ tsp dried basil
Pinch thyme
For the burger
One bun or hamburger roll
Cheese
Horseradish, to taste
Tomato - optional
Parsley - optional
Method
For the shredded chicken
Layer the chicken on the bottom of a crock pot.
Combine all the other ingredients in a bowl.
Pour over the chicken.
Cover the crock pot, and cook on low for about 4 - 5 hours.
Shred the chicken with a fork.
Cook for another 1 hour or so.
For the burgers
I put a slice of cheese on one side, and grilled it slightly so the cheese was just melting.
Add some horseradish, and the pulled chicken.
Add anything else - I used tomato, and parsley, and serve.
