Silky Tofu with Mixed Vegetables

This recipe makes a delicious tofu dish that is tasty and melts in the mouth. It's a great quick dish to cook when you want something simple yet tasty for lunch or dinner.

Preparation Time: 5 minutes
Cooking Time: 5 minutes
Makes: 4 servings

2 x 300g silky tofu, diced
1 clove garlic, minced
1 cup frozen mixed vegetables
2 tablespoons oyster sauce
1 teaspoon sesame oil
1 cup vegetable stock
1 tablespoon corn starch
few dashes white pepper powder
chopped spring onion, to serve
steamed jasmine rice, to serve

In a bowl, mix the corn starch with 2 tablespoons of water. Set aside.

Heat 2 tablespoons of vegetable oil in a frying pan. Add in the garlic and fry until golden.

Add in the mixed vegetables and stir fry for 1 minute.

Add in the tofu and gently stir for 1 minute.

Pour in the vegetable stock with oyster sauce, sesame oil and white pepper powder. Gently stir until combined. Bring to the boil.

Remove from the heat. Give the corn starch mixture a quick stir and pour into the pan while stirring to combine until silky and thickens.

Transfer to a plate and sprinkle some chopped spring onion. Serve with steamed jasmine rice.
