Simnel Cupcakes
Simnel cake is a light fruit cake layered with almond paste. It was original made for the Sunday halfway through Lent, when fasting was allowed to be relaxed for the day. Now, they are more commonly enjoyed on Mothering Sunday. Traditionally, twelve balls of marzipan decorate the top of the cake to represent the apostles. Here, however, each apostle has their own individual cupcake, making them perfect for an indulgent snack or treat.

Makes: 12 servings
Ingredients
2 eggs
225g self raising wholemeal flour
115g margarine
115g muscavado sugar
20g dried figs
20g apple rings
20g dried apricots
20g prunes
40g dried banana
50g sultanas
75g raisins
1tsp baking powder
1tsp cinnamon
1tsp mixed spice
1tsp vanilla extract
200g ground almonds
100g caster sugar
50ml water
100g icing sugar
Method
Mix together the flour, baking powder, muscavado sugar, cinnamon, mixed spice, and dried fruits.
Rub in the margarine and beat in the eggs.
Spoon the mixture into cupcake cases and bake in the oven.
Dissolve the caster sugar in water by heating on the hob.
Stir the syrup in to the ground almonds and icing sugar to form almond paste.
Chill the almond paste in the fridge for about half an hour.
Shape the dough into a flattish ball, and slice through it with a cookie cutter. Then using a knife, cut cylindrical slices to cover the cupcakes.
