Ingredients 1 cup fresh leek/onion strips
1-2 cup fresh button mushroom slices
1-2 cup spinach leaves
6-8 free range chicken breast slices, chopped into strips
2 big/3 small free range eggs
50g fresh milk, optional
salt and pepper
Olive oil cooking spray
1-2 tsp unsalted butter
In a mixing bowl, add eggs and fresh milk, sprinkle with some salt and pepper, whisk to mix well. Set aside.
Spray oil evenly on a non-stick frypan over medium heat.
Add leek/onion strips, mushroom slices and butter. Stir to combine.
Fry until mushroom is tender and a bit brown.
Sprinkle with some salt and pepper.
Add chicken breast strips.
Followed by pouring into the egg mixture.
Add spinach leaves.
Flip half circle to cover another half.
Transfer to a plate.
Serve immediately or warm.
