Simple Irish Stew
This simple recipe is a great winter warmer. I use only a few ingredients but it still manages to pack in the flavour.
I try to keep it clean and clear, cooking with little colour so keep the heat on medium only, it may take a bit longer to cook, but that's a good thing.
I use half chicken stock and half beef stock so as not to over power the lamb flavour.

Makes: 2 servings
Ingredients
4 forequarter lamb chops
3 medium potatoes
1/2 leek
1 medium brown onion
1/4 cup plain flour
Salt and pepper (to taste)
300ml chicken/beef stock
50 gm butter
Method
In a heavy based saucepan place the butter and a splash of vegetable oil and place on medium heat.
Combine the flour, salt and pepper and tip onto a plate. Coat the chops in the flour mix on both sides and place in the saucepan and seal on both sides with limited colour.
Meanwhile, thickly slice the potatoes, and chop the onions and leek into strips.
Once chops are sealed on both sides add the onion and leek and fry gently, then add the remaining flour (if any) and stir to combine.
Pour in the stock and 300 ml of water to cover the chops. Place the potatoes in and bring to the boil then cover with a lid.
Simmer for 20 minutes, stirring occasionally, then remove the lid and continue to cook until potatoes are soft and lamb is cooked through.
Correct seasoning and serve with chopped parsley and more black pepper.
