Simple Pea and Ham Soup

What to do with the left over Christmas Ham Hock? Turn it into this easy, hearty and delicious Pea and Ham Soup. Make up a big batch and the family will love you for it.

Simmer for an hour and a half


Preparation Time: 10 minutes
Cooking Time: 90 minutes
Makes: Large saucepan

Ingredients
400g yellow or green split peas
1 large onion
2 carrots, peeled and diced
1 ham hock
3 litres filtered water
3 cloves garlic
1 teaspoon thyme leaves
Pepper to taste

Add little chunks of ham


Method
  • Combine all ingredients in a large saucepan, bring to the boil.
  • Cover and simmer for 90 minutes until peas are soft.
  • Remove bones. Add any leftover bits of ham. Blend all together until smooth.
  • Serve steaming hot with croutons (or little chunks of fried bread).

  • Serve with croutons
