This entree dish is so easy to prepare, yet it tastes and looks very impressive - which is always a good thing when it comes to entertaining distinguished guests. Unless you're catering to vegetarians, this Simple Salmon Mousse will be a definite crowd pleaser. There are quite a number of ingredients, all of which you will find in any large supermarket.

Simple Salmon Mousse
Preparation Time: 30 minutes
Cooking Time: 1-2 hours in the fridge (no oven required)
Makes: 6 servings
Ingredients
400g smoked salmon
250g cream cheese
1/4 cup sour cream
2 tablespoons capers
1/4 cup fresh chopped dill
1 shallot
1 lemon - juice and zest
1 tablespoon horseradish cream
1 tablespoon olive oil (for greasing ramekins)

Ingredients for the mousse
Method
Blend half the smoked salmon, the cream cheese, sour cream, capers, chopped dill, shallot, lemon juice and zest and horseradish cream all together until smooth.

Blend the ingredients until smooth
Take the remaining salmon and divide it between six well greased ramekins.

Lay the salmon in the ramekins
Lay the salmon gently around the base of each ramekin.
Spoon the mousse into each ramekin on top of the salmon.

Place the mousse into each ramekin
Allow the mousses to cool and set in the fridge for 1-2 hours
Turn each mousse out onto a plate, before serving with crusty bread. Enjoy.
