Simple Tofu Veggie Stir Fry
A delicious vegetarian stir fry, low GI and good for you, filled with variety and plenty of vegetables!

Cooking Time: 15 minutes

1/2 red capsicum
3 spring onions
5 button mushrooms
1 bunch Bok Choy
100 grams of soft tofu
1/2 teaspoon minced garlic
1/2 teaspoon minced ginger
1 tablespoon soy sauce
1 teaspoon olive oil
Sliced and Diced
Method
Wash and cut up spring onion, mushrooms, capsicum and bok Choy.
Place olive oil in fry pan, with minced garlic and minced ginger, fry for 2 mins.
Add washed and chopped ingredients from step 1 into fry pan and fry for 5 minutes
Lastly add the soft tofu for 3 minutes
For softer texture fry for longer, if you like it a bit on the raw side, cook for less. For dinner for two just double all ingredients!
