Simple Tofu Veggie Stir Fry

A delicious vegetarian stir fry, low GI and good for you, filled with variety and plenty of vegetables!

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 1 serving

Ingredients


Ingredients
1/2 red capsicum
3 spring onions
5 button mushrooms
1 bunch Bok Choy
100 grams of soft tofu
1/2 teaspoon minced garlic
1/2 teaspoon minced ginger
1 tablespoon soy sauce
1 teaspoon olive oil

Sliced and Diced


Method
  • Wash and cut up spring onion, mushrooms, capsicum and bok Choy.
  • Place olive oil in fry pan, with minced garlic and minced ginger, fry for 2 mins.
  • Add washed and chopped ingredients from step 1 into fry pan and fry for 5 minutes
  • Lastly add the soft tofu for 3 minutes
  • For softer texture fry for longer, if you like it a bit on the raw side, cook for less. For dinner for two just double all ingredients!
