Simple Tomato Pasta Salad

Homemade pasta sauces are delicious and save you money on the shop bought variety. Some recipes are complicated but this simple version is for times when you want a quick and easy meal which won't take long to cook. The sauce can be made in advance and kept refrigerated for use later.

A quick and simple pasta salad is an easy lunch or dinner favourite


Preparation Time: 15 minutes
Cooking Time: 20 minutes
Serves: 2

Ingredients
1 white onion (peeled and chopped)
1 can of chopped tomatoes
1 tsp dried garlic
1 tbsp fresh basil
1 tsp Italian mixed herbs
1 cup of lettuce
1/2 cup of cucumber

Method
  • Chop the onion and fry on a low heat using 1 tsp of oil until browned (will take approximately 5 minutes)
  • Add the cooked onion once cooled along with the tomatoes, garlic and herbs to a blender.
  • Blend into a smooth sauce
  • Add the sauce to cooked pasta and warm through for 5 minutes
  • Chop lettuce and cucumber and add the cooked pasta and sauce to make a quick simple, pasta salad
