Singapore Hokkien Noodle

Hokkien Noodle or Hokkien Mee is a stir-fried noodle cooked in Hokkien style. There are two types of Hokkien Noodle, Malaysian and Singaporean. This recipe is for the Singapore Hokkien Noodle.

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 6 servings

Ingredients
400g pork fillets, cut into thin strips
200g prawns
1 squid tube, cut into diamond shapes and scored
1 bunch choy sum, chop into pieces
4 eggs, lightly beaten
2 cloves garlic, finely diced
3 tablespoons soy sauce
3 tablespoons oyster sauce
1 tablespoon sambal oelek
3 dashes white pepper powder
1 packet hokkien noodle, prepare as per instruction at the back of the packet

Method
  • Heat 2 tablespoons vegetable oil in a large saucepan. Add in the garlic and cook until fragrant.



  • Add in the choy sum and stir-fry until just wilted. Transfer to a plate.



  • Add in the pork and stir-fry for 5 minutes. Transfer to a plate.



  • Add in the prawns and squid pieces and stir-fry for 3 minutes. Transfer to a plate.



  • Pour in the beaten eggs, stir until the eggs are cooked.



  • Add the choy sum, pork, prawns and squid back to the pan. Pour in the soy sauce, oyster sauce, sambal oelek and white pepper powder, stir until combined.



  • Pour in 2 cups of water and add in the noodles. Mix well, cover the pan and bring to the boil. Let it simmer for 5 minutes.



  • Spoon to a plate and serve immediately.
