Singapore Hokkien Noodle
Hokkien Noodle or Hokkien Mee is a stir-fried noodle cooked in Hokkien style. There are two types of Hokkien Noodle, Malaysian and Singaporean. This recipe is for the Singapore Hokkien Noodle.
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 6 servings
Ingredients
400g pork fillets, cut into thin strips
200g prawns
1 squid tube, cut into diamond shapes and scored
1 bunch choy sum, chop into pieces
4 eggs, lightly beaten
2 cloves garlic, finely diced
3 tablespoons soy sauce
3 tablespoons oyster sauce
1 tablespoon sambal oelek
3 dashes white pepper powder
1 packet hokkien noodle, prepare as per instruction at the back of the packet
Method
Heat 2 tablespoons vegetable oil in a large saucepan. Add in the garlic and cook until fragrant.
Add in the choy sum and stir-fry until just wilted. Transfer to a plate.
Add in the pork and stir-fry for 5 minutes. Transfer to a plate.
Add in the prawns and squid pieces and stir-fry for 3 minutes. Transfer to a plate.
Pour in the beaten eggs, stir until the eggs are cooked.
Add the choy sum, pork, prawns and squid back to the pan. Pour in the soy sauce, oyster sauce, sambal oelek and white pepper powder, stir until combined.
Pour in 2 cups of water and add in the noodles. Mix well, cover the pan and bring to the boil. Let it simmer for 5 minutes.
Spoon to a plate and serve immediately.
