Siomay Indonesian Dumplings
Siomay is a popular Indonesian street snack that is made of the mixture of fish, prawns and chicken, which then steamed and eaten with peanut sauce.
Preparation Time: 15 minutes
Cooking Time: 20 minutes
Makes: 4-6 servings
Ingredients
150g raw peeled prawns
1 chicken thigh fillet
200g piece white fish fillet
250g corn flour
2 eggs
5 cloves garlic
4 cloves shallots
2 tbsp fish sauce
1 tsp salt
1 tsp white pepper powder
2 tsp sugar
kecap manis, to serve
lime wedges, to serve
For the Peanut Sauce
500g roasted ground nuts
10 red chillies
8 cloves shallots
5 cloves garlic
1 tbsp sugar
1 tbsp salt
1 tbsp kecap manis
150ml water
2 limes, juiced
Method
Prepare the steamer.
In a food processor, add the prawns, chicken, fish, eggs, garlic, shallots, fish sauce, salt, white pepper and sugar. Blitz for a few seconds until the mixture has form a paste.
Add in the corn flour and blitz until well combined.
Shape a heaped tablespoon of the mixture into a ball and arrange on a heatproof tray. Steam for 20 minutes until they are cooked.
In the meantime, make the peanut sauce. Process all the ingredients in a food processor until smooth. Transfer to a pot, cook on a low heat, stirring, until it boils. Remove from the heat, transfer to a serving bowl.
Cut each cooked dumpling into quarters. Arrange on a plate, spoon over the peanut sauce and drizzle with kecap manis, serve with lime wedges.
