Skillet Cod Fillet

A sizzling hot pan needn't be avoided - it can be a cooking technique that makes food delicious. Try this skillet cod fillet.



Preparation Time: 2 minutes
Cooking Time: 15 minutes
Makes: 2 adult servings

Ingredients
Cod fillet
Bunch of asparagus
3 tblsp coconut oil
3 Garlic cloves
Thumb of ginger
Bunch of thyme
Pinch of ground black pepper
Required ingredients


Method
  • Bash the garlic and ginger in a pestle and mortar.



  • Add them to a frying pan with the thyme and oil. Cook over a medium heat for 2 minutes.



  • Add the fish, flesh side down and cook for 2 minutes.



  • Steam/boil the asparagus for 10 minutes.



  • Turn the fish over and cook for a further 2 minutes.



  • It should gently flake. Cook for 8 minutes on low.



  • Serve the asparagus first.

  • Top with the fish and squeeze over the lemon to taste.



  • Serve and enjoy.
