Skinny Big Breakfast Smoked Salmon Omelette
Omelettes are extremely versatile because you can put almost anything you want in them.
I had some smoked salmon, french onion and mini cheese kransky laying around so whipped them all together into one big breakfast dish and it turned out pretty amazing.
This breakfast serving may look big but all the ingredients are super fresh. A yummy breakfast filled with good fats and protein.
Preparation Time: 15 minutes
Cooking Time: 10 minutes
Makes: 2 servings
Ingredients
200g smoked salmon
4 eggs
1 french onion
1 tablespoon cream fraiche
1/2 lemon
6 mini cheese kransky
4 thick toast
2 tablespoon olive oil
50g dill
50g button mushroom
50g gourmet salad
50g low fat cheese
Salt and pepper
Method
Preheat oven to 180C.
Put smoked salmon, dill, french onion and a dollop of cream fraiche in a blender.
Add juice of 1 lemon and lightly drizzle some olive oil.
Coarsely blend the mixture and set aside.
Heat some olive oil on a non-stick fry pan over a medium heat.
Whisk eggs until foamy and season with salt and pepper.
Pour in the egg into the pan. Spread the smoked salmon mixture around and cook until no runny liquid remains.
Fold the omelette into a beautiful half-moon shape.
Scatter some shredded cheese on top.
Place it in the oven and bake for 5 minutes.
While the omelette is in the oven.
Add some more oil in the pan and light grill the cheese kransky and button mushrooms.
Remove and set aside.
Drizzle some extra virgin light olive oil on the bread.
Toast in the oven for 2 minutes or until golden and crispy.
Assemble everything together on a plate.
Garnish with a light salad by the side.
Season with salt and pepper.
Does it looks impressive? This is a perfect lazy Sunday brunch. It is delicious and so easy to make.
Add red & green pesto sauce if you like a heavier flavoring.
