Skinnygirl Brunch

Brunch is possibly my favourite sitting, but brunch can be a calorific indulgence. To slash the fat and still eat a delicious meal I've created 'skinnygirl brunch'.



Preparation Time: 2 minutes
Cooking Time: 20 minutes
Makes: 1 servings

Ingredients
1 Egg
1 Carrot
2 Tblsp Hoummus
Half Red Pepper
Bunch of Kale

Method
Chop the pepper into chunks.



Peel and slice the carrots.

Place the peppers and carrots on to a baking tray and drizzle with olive oil. Put the tray in the oven for 20 minutes at 180 degrees/gas mark 4.

Wash the kale and place in a saucepan of boiling water for 10 minutes.

Crack the egg into a egg holding plastic cup, place in a saucepan of boiling water, and turn to a medium heat for 3 minutes.



Place a dollop of hoummus on to a plate.

Slide the egg out of the egg holding cup.



Remove the pepper from the oven, toss and plate up along with the kale and poached egg.

Here's to a healthier, mid-morning brunch.
