SlowCooked Beef Brisket with Goji Berries

A rich, nourishing Chinese soup of beef brisket broth with a beautiful scattering of scarlet goji berries and a handful of cilantro.



Preparation Time: 5 minutes
Cooking Time: 80 minutes
Makes: 4 servings

Ingredients
750g beef brisket
50g ginger, unpeeled, crushed slightly
5 1/4 cups chicken stock
1/3 cup shaoxing rice wine
2 tbsp goji berries, rinsed
handful of chopped cilantro

Method
  • Bring a panful of water to a boil. Add the beef, cook for 3-4 minutes to allow any impurities to rise to the surface. Pour off the water and rinse the beef thoroughly under the tap.



  • Place the beef in a stockpot, pour in the stock and bring to a boil. Skim. Add rice wine and ginger and return to a boil. Cover and simmer for an hour until the beef is tender.



  • Discard the ginger. Remove the beef from the pot to a chopping board and cut into finger-thick strips. Return to the pot and add in the goji berries. Simmer for a further 10 minutes.



  • Scatter fresh cilantro and serve.
