Slow Cooked Malaysian Style Beef Rendang
This Malaysian style curry is a fabulous winter warmer. It's a great one to add to your freezer stash too.
Preparation Time: 25mins
Cooking Time: at least 6hrs
Makes: 6 or more servings
Ingredients
Paste:
6 dried kefir lime leaves
6 dried curry leaves
1tsp ground turmeric
1tbs whole coriander seeds
1tbs garlic
1tbs ginger
1cm cube shrimp paste
Rind from 1 lime
1/5 cup coconut oil
Prepare ingredients before you start cooking
Curry
1.7kg cheap cut beef
2 medium onions
1 cup coconut cream
2/3 cup shredded coconut
juice from one lime
1/3 cup {Insanely Healthy Concentrated Vegetable Stock} or stock equivalent
1tsp Garam Marsala
crushed chilli
Method
Place curry and kefir leaves, and coriander seeds in a large tea strainer or muslin bag and set aside.

Place leftover paste ingredients, onion, and shredded coconut in a heavy based pan, grate lime rind into the pot then fry until they are fragrant.

Add to slow cooker with beef and liquid ingredients, add one cup of water then stir well to combine.

Set tea strainer in the top so the spices are all covered well by the liquid.
Cook for 6hrs on a low to medium setting.
Check to make sure beef is tender then add seasoning and garam marsala.
Serve with rice, or pea puree to make it a low carb meal, and roasted carrots or other vegetables.
Sprinkle crushed chilli on top for a hotter version.
