Slow Cooked Moroccan Lamb Shanks

Posted 2017-10-28 by Belindafollow

Moroccan lamb shanks are a deliciously flavourful meal the entire family will enjoy. If you don't have any lamb shanks, you can easily switch them for another cut of lamb.

Preparation Time: 10 minutes
Cooking Time: 4 or 8 hours
Serves: 4

Ingredients
1 onion, finely diced
2 garlic cloves, crushed
1 tsp cinnamon
1 tsp ground allspice
1 tsp ground coriander
1 tsp ground nutmeg
1 tsp turmeric
1 tsp ground black pepper
1 tsp paprika
4 tbs tomato paste
400 g can crushed tomatoes
400 g can chickpeas, drained
400 g can cannellini beans, drained
4 lamb shanks (or a mixture of lamb cuts)

Method
  • Combine the onion, garlic, cinnamon, allspice, coriander, nutmeg, turmeric, pepper, paprika, tomato paste and crushed tomatoes in the bowl of your slow cooker. Stir through the chickpeas and beans.

  • Place the lamb on top and stir through the sauce.

  • Cover and cook on high for 4 hours or low for 8 hours.
  • Serve on a bed of mashed potatoes.

  • Note: For this recipe, I used 2 lamb shanks and 600 g of lamb ribs.
