Slow Cooked Moroccan Lamb Shanks
Moroccan lamb shanks are a deliciously flavourful meal the entire family will enjoy. If you don't have any lamb shanks, you can easily switch them for another cut of lamb.
Preparation Time: 10 minutes
Cooking Time: 4 or 8 hours
Serves: 4
Ingredients
1 onion, finely diced
2 garlic cloves, crushed
1 tsp cinnamon
1 tsp ground allspice
1 tsp ground coriander
1 tsp ground nutmeg
1 tsp turmeric
1 tsp ground black pepper
1 tsp paprika
4 tbs tomato paste
400 g can crushed tomatoes
400 g can chickpeas, drained
400 g can cannellini beans, drained
4 lamb shanks (or a mixture of lamb cuts)
Method
Combine the onion, garlic, cinnamon, allspice, coriander, nutmeg, turmeric, pepper, paprika, tomato paste and crushed tomatoes in the bowl of your slow cooker. Stir through the chickpeas and beans.
Place the lamb on top and stir through the sauce.
Cover and cook on high for 4 hours or low for 8 hours.
Serve on a bed of mashed potatoes.
Note: For this recipe, I used 2 lamb shanks and 600 g of lamb ribs.
