Slow Cooked Pickled Pork Corn Puree and Pumpkin
This succulent pork is so tender it will fall apart. It is full of flavour and is complemented by a corn puree and roasted pumpkin slices.
This is a great Sunday, Easter or Christmas roast to share with family.

Serves: 6
Ingredients
2 kg pickled pork leg
Water, to cover pork
4 tbsp brown sugar, packed
4 tbsp rice wine vinegar
1 tbsp pepper corns
2 bay leaves
1 tbsp pepper corns
1/2 pumpkin, cut into thick slices
400 g baby spinach
800 g can corn kernels, drained
Oil
Salt and pepper
Method
Place the pork in the slow cooker, cover with water and stir in the sugar, pepper, bay leaves and vinegar. Cover and cook on low for 7 1/2 hours.

After 6 1/4 hours of the pork cooking, preheat the oven to 220 degrees. Bake the pumpkin for 30 - 45 minutes until soft and caramelised. Set aside.
Preheat a frypan on high. Once hot, gently transfer the pork from the slow cooker to the pan. Turn to cook and seal the outside of the pork. Transfer to a plate to rest for at least 10 minutes.
Place the corn kernels, 1 cup of the fluid from the slow cooker in the frypan and season with salt and pepper. Cook for 5 minutes on medium.
Add 1 tbsp butter and blend until smooth.

Toss the baby spinach with olive oil and season with salt and pepper.
Serve slices of pork with corn puree, roasted pumpkin slices and baby spinach.
