Slow Cooked Pickled Pork Corn Puree and Pumpkin

This succulent pork is so tender it will fall apart. It is full of flavour and is complemented by a corn puree and roasted pumpkin slices.

This is a great Sunday, Easter or Christmas roast to share with family.

Preparation Time: 5 minutes
Cooking Time: 8 hours
Serves: 6

Ingredients
2 kg pickled pork leg
Water, to cover pork
4 tbsp brown sugar, packed
4 tbsp rice wine vinegar
1 tbsp pepper corns
2 bay leaves
1 tbsp pepper corns
1/2 pumpkin, cut into thick slices
400 g baby spinach
800 g can corn kernels, drained
Oil
Salt and pepper

Method
  • Place the pork in the slow cooker, cover with water and stir in the sugar, pepper, bay leaves and vinegar. Cover and cook on low for 7 1/2 hours.

  • After 6 1/4 hours of the pork cooking, preheat the oven to 220 degrees. Bake the pumpkin for 30 - 45 minutes until soft and caramelised. Set aside.
  • Preheat a frypan on high. Once hot, gently transfer the pork from the slow cooker to the pan. Turn to cook and seal the outside of the pork. Transfer to a plate to rest for at least 10 minutes.
  • Place the corn kernels, 1 cup of the fluid from the slow cooker in the frypan and season with salt and pepper. Cook for 5 minutes on medium.
  • Add 1 tbsp butter and blend until smooth.

  • Toss the baby spinach with olive oil and season with salt and pepper.
  • Serve slices of pork with corn puree, roasted pumpkin slices and baby spinach.
