Slow Cooked Pork Ribs with Bacon and Cheese Potato Skins

A special treat in our house is slow cooked pork ribs with bacon and cheese potato skins. These tender pork ribs fall off the bone making them perfect for young children, and, the potato skins are a change from the chips you'd typically have with ribs.


Preparation Time: 15 minutes
Cooking Time: 6-8 hours
Serves: 4

Ingredients
2 racks of pork ribs
3/4 cup bbq sauce
1/2 cup tomato sauce
1/2 cup apple cider vinegar
1/3 cup brown sugar
1 clove garlic crushed
2 tsp smoked paprika
4 potatoes
cheese, grated
bacon, diced


Method
  • Combine the bbq sauce, tomato sauce, vinegar, sugar, garlic and paprika and mix well to combine.
  • Line your slow cooker with baking paper then place ribs on top of the paper. Pour sauce on the meat, making sure the meat is well coated.

  • Place lid on the slow cooker and cook on low for 6-8 hours. You will know when the ribs are ready because the meat will shrink back exposing the bones and the meat will easily fall from the bones.
  • Using a clean scrubbing brush wash your potatoes well. Prick the outside of the potatoes all over and place them in your microwave on paper towel. Cook on high for 12-14 minutes.
  • Preheat oven to 220C.
  • Once the potatoes have cooled enough to handle, slice them in half and scoop out the flesh leaving a 1/4 inch border.

  • Lightly coat in olive oil and salt and place on a baking tray skin side up. Bake for 10-15 until skin is crispy then turn over and continue baking for a further 10 minutes.
  • Using a frying pan over high heat, cook the diced bacon until crisp, drain on paper towel.
  • Remove the potatoes from the oven and place a thin layer of grated cheese inside the potatoes, top with bacon and sprinkle the tops with more cheese. Bake for 10 minutes until cheese is melted and becoming golden.

  • Remove ribs from the slow cooker, being careful not to break them as you move them.
  • Sieve the sauce remaining in the slow cooker and use this to top to ribs when you serve them. If the sauce is too thin, you may want to turn the slow cooker to high and leave to simmer with the lid off for 30 minutes.
  • Serve the ribs with the sauce and the potatoes.

  • You should try topping the potatoes with sour cream and sweet chilli sauce.
