No Bake Chocolate Peanut Butter Cookies

Who can resist the delicious combination of chocolate & peanut butter? It's easy to whip up a batch of these when you need a last minute treat for parties, bake sales or a special afternoon treat.

Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 12 servings

100g good quality baking chocloate
24 Ritz crackers (or similar variety)
1/4 cup peanut butter
Coloured sprinkles/ Hundreds and Thousands for decorating

Get the kids involved in making this simple recipe. It's easy for them to complete each step and the end result still tastes great even if it is a little messy.

Use a butter knife to spread peanut butter on 12 of the Ritz crackers. Carefully place the remaining crackers on top to form 12 sandwiches.

Spread the peanut butter

Break or chop the chocolate and place into a microwave safe bowl. Carefully melt the chocolate in the microwave (alternatively you can melt the chocolate in a double boiler).

Microwave the chocolate in short 20-30 intervals to ensure it does not burn.

Dip the cracker sandwiches into the chocolate to fully coat both sides.

Don't be afraid to get your hands dirty...it's only chocolate!

Place the chocolate coated sandwiches onto a baking tray lined with baking paper.

Decorate the tops of the cookies with candy sprinkles.

Place the cookies in a cool spot in the kitchen to allow the chocolate to set. Store cookies in an air-tight container (if there are any left!).

Hi litah, thank you for the great feedback! So glad you and your daughters enjoyed them...I've been known to sneak a few of these myself too! Peanut butter and chocolate are my weakness!
Thank you so much for this recipe my daughters loved helping me make these espcially today since it's raining, and my detox flew out the door when I tasted one of these. I love anything with peanut butter in it so I had about 3 lol.
