I used a slow cooker in all seasons even though I do not go to work. I find it cooks everything and makes it all so tender and in particular meat and chicken.
This recipe is no exception and while it takes longer to cook you can put it in the crock pot or slow cooker, and come back and it is ready to serve.
Preparation Time: 10 minutes
Cooking Time: About 1 ½ to 2 hours
Ingredients 4 chicken breasts
1 tbsp oil
½ onion, chopped
1½ cups mushrooms, sliced
175 g tomato bisque - I used cans
175 g can cream of mushroom soup
½ cup red wine
Pinch salt and pepper
Cook the onions and mushrooms in olive oil for a few minutes.
Add the chicken, but cut into half if they are large.
Mix the remaining ingredients, and pour over the chicken mixture.
Cook on low for about 2 hours, and just before it is cooked, get your rice ready.
You could serve with potatoes instead of rice, and the meat is very tender.
