Slow Cooker Potato and Corn Soup
This soup is perfect for a cold winter's night or a sunny autumn afternoon. Throw all the ingredients in the slow cooker and walk away; come back to a creamy, hearty meal everyone will love.

Makes: 6 servings
Ingredients
450g potatoes
450g frozen corn kernels
1/4 cup plain flour
1 tsp onion powder
1 tsp garlic powder
1 tsp dried thyme
1/2 tsp smoked paprika
4 cups vegetable stock
2 tbs butter
Salt and pepper to taste
1 cup heavy cream
Parsley to garnish (optional)
Method
Cut potatoes into approx 2cm chunks.
Place potatoes and frozen corn in slow cooker.

Add flour and toss through vegetables.

Add smoked paprika, onion powder, garlic powder, thyme and vegetable stock.
Cook on high for 3 hours or until potatoes are tender.
Stir in cream and butter and season to taste.

Garnish with parsley if desired.
Serve with your favourite crusty bread.
