Slow Cooker Potato and Corn Soup

This soup is perfect for a cold winter's night or a sunny autumn afternoon. Throw all the ingredients in the slow cooker and walk away; come back to a creamy, hearty meal everyone will love.



Preparation Time: 10 minutes
Cooking Time: 3 hours
Makes: 6 servings

Ingredients
450g potatoes
450g frozen corn kernels
1/4 cup plain flour
1 tsp onion powder
1 tsp garlic powder
1 tsp dried thyme
1/2 tsp smoked paprika
4 cups vegetable stock
2 tbs butter
Salt and pepper to taste
1 cup heavy cream
Parsley to garnish (optional)

Method
  • Cut potatoes into approx 2cm chunks.
  • Place potatoes and frozen corn in slow cooker.

  • Add flour and toss through vegetables.

  • Add smoked paprika, onion powder, garlic powder, thyme and vegetable stock.
  • Cook on high for 3 hours or until potatoes are tender.

  • Stir in cream and butter and season to taste.

  • Garnish with parsley if desired.
  • Serve with your favourite crusty bread.
