I generally have cooked chicken in the freezer. However this time I decided to make a batch myself in the crock pot.
It turned out lovely and I froze half and used the other half to make a delicious burger.
Preparation Time: 25
Cooking Time: 6 hours approximately
Serves: 1 burger plus chicken left for freezing
Ingredients
For the chicken
3 large chicken breasts, no skin
300 g condensed tomato soup
¾ cup onion, chopped
¼ cup vinegar
3 tbsp coconut sugar
1 tbsp Worcestershire sauce
¼ tsp basil, dried
Salt, to taste
Pinch ground thyme
For the burger
1 hamburger bun
Salad of choice for burger
Slice cheese - optional
Method
For the chicken
Put the chicken on the bottom of the slow cooker.
Mix all the other ingredients in a bowl, and pour this over the chicken.
Cover this, and cook on low for 4 to 5 hours.
Shred the chicken with a fork when it is a bit cooler.
Put it back in the slow cooker, mix and cook for another hour or two.
For the burger
Add the chicken meat - I added heaps. I also put a slice of cheese on each side of the bun
I then topped the chicken with tomato, lettuce, and onions.
