Slow Cooker Pulled Pork

Using your slow cooker to make Pulled Pork is the easiest, no fuss way to make delicious tender Pulled Pork for use on Sandwiches, Nachos, Tacos or simply eating with vegetables or salad

Preparation Time: 5 minutes
Cooking Time: 8-10 hours
Serves: 6

1.5-2kg Pork Shoulder rind removed
2 Onions sliced thickly
1 cup Apple Cider Vinegar
1 cup Chicken Stock
1 tbsp Paprika
1 tbsp Pepper
2 tbsp Brown Sugar
1tsp Chilli Powder
1 tsp Garlic Powder
Salt to taste

Layer onions in the bottom of your slow cooker pot, add vinegar and chicken stock
Make a dry rub by combining your Paprika, Pepper, Brown Sugar, Chilli and Garlic powder. Using paper towel pat the pork dry then rub the spice mix all over the pork and place it on top of the onions in the slow cooker
Cover and cook on low for 8-10 hours. You will know its cooked when the collagen has broken down to the point that you can pull it apart easily with two forks
Move pork shoulder to a chopping board and shred into bite size pieces discarding any large pieces of fat
Pour the onion/stock mixture from the slow cooker through a strainer and reserve the strained liquid
Add shredded pork to a bowl and mix in 1/4 cup of strained liquid at a time until pork is moistened to your liking. Add salt to taste then serve
