Smoked Mackerel Pate
When you are entertaining friends or family for dinner, it's always nice to have something to nibble while everything is being prepared. Many people serve dips and crisps. If you're looking for something a bit different, full of flavour and certain to impress then try this smoked mackerel pate.
This can easily be made the night before leaving you one less job to do as you prepare your maincourse. It's also a very simple, chuck it all and whizz it up recipe which anyone can do.
It serves around 12 people if you're just having it for nibbles but works equally well for 8 as a starter.
Don't get too hung up on exact quantities as you can flex to your own taste.

Cooking Time: 0 minutes (there's nothing to cook)
Makes: 10-12 servings
Ingredients
Packet of smoked mackerel (they're usually around 225g from the supermarket)
1 lemon
200g cream cheese
1 heaped tablespoon of creme fraiche
A few sprigs of parsley
Pepper
Method
Remove skins from mackerel, flake and place in a food processor
Grate zest of lemon and squeeze out juice
Place zest, juice and rest of ingredients in the food processor.
Blitz for a few seconds until all combined but there is still texture.
Ready to serve
To serve as a nibble, toast some pitta or other flat bread and cut up into lengths or triangles. If you're using this pate as a starter you could place it in small individual ramekins or dollop onto grainy brown toast.
Great with some toasted pitta bread
Add a little chopped parsley over the top for a burst of colour.

As well as tasting great, mackerel is a great source of unsaturated Omega 3 oils so is a healthy option too.
