Smoked Salmon filled with Avocado and Cream Cheese Mousse
Smoked salmon is a versatile food and marries with a lot of other food to make delicious meals apart from eating it on a roll or bagel.
The saltiness of the smoked salmon gives a lovely flavour when adding the slightly sweet flavour of the cream cheese and avocado mix.
This recipe is probably best made the day before, as the filling would set properly.

Makes: 4 servings
Ingredients
200 g packet [link http://reviewclue.com.au/smoked-salmon-by-ocean-blue/ smoked salmon]
2 avocados
100 g [link http://reviewclue.com.au/double-blocks-of-philadelphia-cream-cheese/ cream cheese]
2 tbsp lemon juice
2 tsp horseradish cream
½ bunch dill, chopped
Salt and pepper
Method
Take the stones out of the avocados and put the avocado flesh in a bowl.
Add the cream cheese, lemon juice, horseradish and dill. Combine with a fork making it quite smooth.
Line the inside of 4 quite large coffee cups with plastic wrap.
Put the salmon on the bottom and sides of this wrap.
Try and bring some up over the edge of the cup
Fill with the avocado mixture, press this down, and fold ends of smoked salmon over the top if possible.
Put a plate on the top of a few and carefully invert the plate, and the smoked salmon parcels will slide down out of the cup.
Garnish with a drizzle of olive oil and balsamic vinegar.
Add some potato chips, or garlic bread, and serve.
