Smoked Salmon Rillettes

This is a simple but a sophisticated spreadable smoked salmon pate. The rillettes can be made in advance and refrigerated for up to 2 days. It is a winning combination and will definitely impress your friends. Perfectly elegant and scrumptious for a dinner party too.


Preparation Time: 5 minutes
Cooking Time: 2 minutes
Makes: 8 servings



Ingredients
500g smoked salmon
1 small French onion
Juice of 1/2 lemon
50g fresh dill
Salt & pepper
8 Rivita Wholegrain Crispbread


Method
  • Check smoked salmon for fine fish bones.



  • Place smoked salmon, French onion and dill into the blender.
  • Add lemon juice.



  • Set on high and blend the mixture coarsely.



  • Season with rock salt and cracked pepper.


  • Spread the smoked salmon rillettes on the crispbread. You can substitute with toasted sourdough baguette, too.



  • Serve and enjoy.
