Smoked Salmon Wraps with Eggs and Lettuce Coleslaw

A light and healthy meal, which takes next to no time to prepare. Suitable for kids lunch boxes.



Preparation Time: 8 minutes
Cooking Time: 0 minutes
Makes: 4 servings

Ingredients
4 wraps of your choice, rye or wholemeal are ideal
100g smoked salmon, sliced
4 hard boiled eggs, peeled and chopped
300g iceberg lettuce, coarsely shredded
4 tablespoons mayonnaise, such as SW
2 teaspoons finely grated lemon rind
2 teaspoons finely chopped capers
Salt & freshly ground black pepper



Method

  • Lay bread on a board and divide smoked ocean salmon along one edge of each piece of bread.



  • In a large bowl, toss egg and lettuce together.



  • In a small bowl, whisk together mayonnaise, lemon rind and capers.



  • Season with salt and pepper and fold through the egg and lettuce.



  • Pile salad onto wraps and roll up firmly to enclose.



  • Slice in half and serve.
