Smoked Trout Linguine
A satisfying pasta dish that is ready in less than 20 minutes. Quality ingredients make a world of difference so don’t scrimp. Add in your favourite fresh herbs to suit your taste.

Cooking Time: 20 minutes
Serves: 4
Ingredients
300 g dry linguine pasta
100 g smoked ocean trout
60 g butter
2 garlic cloves, crushed
1 onion, finely chopped
1 cup thickened cream
1 cup chicken stock
2 tbs chopped dill, optional
pepper
Method
Heat oil in pan over medium and gently fry garlic and onion until soft.
Add cream, stock and pepper. Simmer for 10 minutes until flavours have combined and sauce should thicken slightly.
Meanwhile cook linguine as per directions on pack.
Gently tear trout into whatever size you like.
Add trout to the sauce, cover and simmer for a further 3 – 4 minutes until trout has warmed through.
When cooked, drain linguine and add to creamy mix.
If desired, garnish with dill and serve with crusty garlic bread or a fresh salad.
