Smoky Chorizo and Baby Kale Spaghetti

This is one of my favorite meals to make when we are all in a hurry but very hungry. This is one recipe that could make you love kale.



Not only does this pasta tastes delicious, it looks stunning enough for dinner parties.

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Makes: 2 servings



Ingredients
1 smoky chorizo sausage
250g baby kale
500g spaghetti pasta
1 red capsicum
1 french onion
3 tablespoon capsicum, fig and hazelnut tomato paste
1 tablespoon olive oil
1/4 lemon
50g cheese shavings
Salt and pepper to season

Method

  • Heat a tiny amount of olive oil in a frying pan and add the sliced chorizo and gently brown the chorizo until crisp on the edges.
  • Remove and set aside.



  • Use the same fry pan, quickly sautee the red capsicum slices and diced onions. Lightly season with salt.
  • Remove and set aside.



  • Meanwhile, cook spaghetti according to the packet instructions in boiling salted water until al dente.



  • Drain the spaghetti well and add it to the frying pan and stir in the reserved chorizo oil.
  • Add the chorizo slices and the capscium back into the pan.



  • Stir in the tomato paste and mix everything evenly together.
  • Remove the pan from heat.



  • Toss in the baby kale. Use the residual heat to cook the kale through.
  • Season with sea salt and cracked black pepper



  • Divide equally among plates.



  • Garnish with shaved cheese.



  • Serve and enjoy!
