Soba Noodle and Smoked Salmon Salad
This salad will have your friends tantalized at how something this good won’t break the bank, is healthy and filling and quick to make. With summer on the way, this low fat and spicy noodle salad will give you the energy needed to deal with the day ahead. I usually prepare the noodles and sauce the night before and refrigerate in separately sealed containers. Once at work, I’ll combine the noodles and sauce.

Preparation Time: 5 minutes
Cooking Time: 4 minutes
Makes: 1 serving
Ingredients
90g of dried organic soba noodles
50g of smoked salmon
Sauce
1 teaspoon of wasabi paste
1 teaspoon of lemon-grass
1 teaspoon of bonito soup stock powder
6 teaspoons of mirin
1 teaspoon of fresh chilli
1 teaspoon of pickled pink ginger
50ml cup of soy sauce
Key salad ingredients.
Method
Bring a pot of water to a rapid boil.
Add the soba noodles to the boiling water.
Cook for 3-4 minutes only.
Add soba noodles to boiling water and cook for 34 minutes.
Remove from heat and drain.
Rinse noodles with cold water.
Add ice-cubes to the noodles and running water to chill noodles.
Drain and set aside to make the dipping sauce.
Rinse and drain noodles with icecubes and running cold water.
Dipping Sauce
Combine the soy sauce, wasabi, fresh chilli, lemon-grass, bonito stock powder, mirin, ginger and mix thoroughly.

Assembling the Salad
Plate soba noodles.
Shred smoked salmon over drained noodles.
Drizzle sauce over noodles and salmon.
