Soba Noodle Stir Fry

This can only be described as a delightful bowl of colour and nutrition. Not only is it an incredibly addictive dish that will have you inevitably coming back for more, but is also packed full of antioxidants thanks to the deep coloured vegetables.



Bound to please all and become a family favourite.

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 6 servings

Ingredients
170g soba noodles
2 tbsp coconut oil
2 tsp ginger, grated
1 red onion, finely sliced
3 carrots, cut into thin, long slices
1/2 red cabbage, shredded
1/2 broccoli, cut into thin strips
2 handfuls mixed leaves

Dressing
1 tbsp sesame oil
2 tbsp extra virgin olive oil

Topping
30g mixed sesame, sunflower and poppy seeds
1/2 bunch coriander, roughly chopped (stems included)
1/2 bunch mint, roughly chopped

Method
  • Cook soba noodles according to packet instructions, and when tender, drain and rinse with cold water. Set aside.
  • Over a high heat, add coconut oil and onion to a wok and fry for a minute. Then add in the carrots, cabbage and broccoli, stir-frying until becoming tender.



  • Add the mixed leaves and continue to cook for a further 2 minutes before removing from heat.



  • In a small frying pan, dry roast the mixed seeds until golden brown over a high heat (should only take a minute or so.) Throw over stir fry and mix through.



  • Finally, drizzle the dressing ingredients and sprinkle the remaining herbs over the top. Then sit back and devour.
