Soft Oat Cookies

Soft Oat Cookies

Posted 2014-09-06 by Kate Matefollow
These oat cookies are full of flavour but they are soft and moist and so delicious, especially a few minutes after they have came out of the oven. They fixed my sweet tooth craving and they aren't full of nasty preservatives or processed sugars. I've used rice malt syrup to sweeten them. I found it at the supermarket only $3.80 a jar and it's organic.

One is never enough

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 8-12

Ingredients
1 ripe banana medium size
1/2 cup peanut butter
1/2 cup of quick oats
1/4 cup raw cacao nibs
2 tablespoons of rice malt syrup

Method
  • Preheat oven to 180 degrees Celsius
  • Mash your banana in a bowl

  • Mashing the banana

  • Add in all other ingredients.

  • All of the ingredients in the bowl ready to be mixed

  • Mix well to combine everything.

  • This is how it should look

  • Spoon mixture onto a tray lined with baking paper and cook for 20 minutes

  • Ready to go into the oven

  • Allow to cool slightly before serving.

  • This is the Rice Malt Syrup I bought
