Soft Shell Crab Burger with Wasabi Mayo

This recipe makes a special burger with crispy juicy soft shell crab served with wasabi mayo.



Preparation Time: 5 minutes
Cooking Time: 6 minutes
Makes: 2 servings

Ingredients
2 soft shell crabs, cleaned
1 egg
1/2 cup milk
1 cup flour
3 tablespoons Japanese mayonnaise
1/2 teaspoon wasabi
mixed salad leaves
2 dampers, toasted
500ml vegetable oil
Sweet potato chips, to serve

Method
  • Heat oil in a wok to 180C.
  • In a small bowl, mix mayonnaise and wasabi. Set aside.
  • In a medium bowl, beat eggs and milk until creamy.
  • Put flour in another bowl. Dip the soft shell crab into the egg batter then coat with flour. Drop battered crab into the hot oil and fry for 3 minutes on each side or until golden.
  • Serve on toasted dampers with wasabi mayo, mixed salad leaves and sweet potato chips on the side.
