Ingredients 50 gm polenta (I used one minute polenta)
250 ml chicken stock
3 tbsp. grated parmessan
1/2 tsp smoked parika
Good pinch salt
Place polenta in a heat proof bowl, heat stock in the microwave until boiling. (Follow pack directions if not using instant polenta)
Pour hot stock over polenta and stir in quickly.
Add the remaining ingredients and continue to stir. As the cheese melts through the polenta it will get a sticky and thick consistency. For a glossier appearance stir in a good knob of butter or a drizzle of quality olive oil.
Spoon into a bowl and serve immediately. Drizzle with more olive oil if using.
