Sorrento Lemon Granita
This is lemon perfection and a wonderful adult refreshment on those long hot summer days and nights when you're wanting something cleansing and refreshing after a meal. It can be made with or without limoncello and is a perfect balance of sweet and sour.
It's a dish that can easily be prepared in the morning and left to its own devices in the freezer. You just need to remember to periodically break down the ice particles every now and again to form a beautifully textured granita.
Serve as a dessert, aperitif or digestif or as a cocktail.

Ingredients
500ml Water
500ml Lemon juice
8 Tablespoons rice malt syrup
40ml Sorrento limoncello
Sorrento limoncello adds a pleasant little kick to the lemon granita.
Method
Bring a saucepan of water to the boil.
Add the rice malt syrup and reduce to a simmer, while continuously stirring until the syrup has completely dissolved.
Remove from heat and set aside to cool for 30 minutes.
Add the lemon juice and limoncello into the cooled syrup and stir well using a whisk or fork.
Lemon juice, limoncello, water and rice malt syrup is all you need to create this lemon granita.
Transfer the mixture into a plastic container with a lid and freeze for 60 minutes.
Remove the mixture from the freezer and stir briskly to create small ice crystals.
Breaking down the ice particles every 3060 minutes allows the ice crystals to form a beautifully textured granita.
Return to the freezer and repeat this process every 30-60 minutes for 2-3 times or until the granita reaches the desired consistency.
