Sour Cream Coffee Cake with Choc Cinnamon Swirl

There is often confusion with the name 'coffee cake'. Some may expect that a coffee cake recipe will contain coffee or coffee flavourings however that is not a hundred percent correct. Coffee cake may refer to two very similar yet different recipes. The first definition refers to cake that is intended to be eaten with coffee or eaten during a 'coffee break' and does not necessarily contain coffee.The second definition refers to cakes which are often sponge cakes and does contain coffee in the ingredients.

This delicious recipe is for the former; cake that is intended to be eaten with coffee. It is a good recipe for lunch with friends or even just to use up extra sour cream.

Preparation Time: 15 minutes
Cooking Time: 45 minutes
Makes: 6 servings

Crumb Topping
1/2 cup flour
1/2 cup caster sugar
Pinch of salt
60g unsalted butter, chopped

Chocolate Cinnamon Swirl
1/4 cup caster sugar
1 tsp cocoa powder
1 tsp grounded cinnamon

Sour Cream Cake
1 1/2 cup flour
1/2 tsp baking powder
1/2 tsp baking soda
Pinch of salt
125g unsalted butter, softened
1 cup caster sugar
2 eggs
1 cup sour cream
1.2 tsp vanilla essence

For the crumble topping, mix together the flour, sugar and salt in a large bowl.

Using fingertips, rub the butter into the flour mixture until fine breadcrumbs form. Set aside.

To make the chocolate cinnamon swirl, mix together the sugar, cocoa powder and cinnamon with a metal spoon.

Preheat the oven to 180 degrees. Grease and line a cake pan. (I used a 18cm diameter round pan)
Sift the flour, baking powder, baking soda and salt into a large bowl. Set aside.

Beat the butter and sugar until smooth and fluffy. Add in the eggs one at a time and beat well after each addition.
Add in the sour cream and vanilla and beat for 2 minutes or until well combined.

Add in the flour mixture, portions at a time.

Beat well after each addition so that the mixture is just incorporated.

Pour half of the cake mixture into the prepared pan.

Sprinkle half the cinnamon mixture over the cake.
Repeat by pouring remaining cake mixture over the cinnamon. Then topping with remaining cinnamon mixture.

Finally, top evenly with the crumble topping.

Bake for 45 minutes or until a skewer inserted comes out clean.
Allow the cake to rest for 15 minutes before serving.
